Think of Rosa Mexicano as the Fogo de Chao of Mexican food: Grand, upscale -- the food at this ever-expanding enterprise runs the gamut from simple queso fundido to elaborate dishes such as mixiote de borrega, a lamb shank slow-cooked en papillote.
