After running multiple locations of other people's restaurants, Chic Dillard decided it was time to go into business for himself. His first hires -- his wife and daughter -- are partners in the Big Shanty Smokehouse, where the chicken, ribs and pork is cooked in a smokehouse built behind the house. Look for ribs, hand-rubbed with a secret mix, smoked and finished with just a brush of barbecue sauce; hand-pulled pork or chicken sandwiches; Brunswick stew; and a variety of sides made by the Dillard women.
